Pumpkin Spice Chocolate Chip Muffins

Lately, I’ve seen several bloggers talking about an easy 2 step recipe for pumpkin muffins. They sounded delicious and I’m trying my absolute best to get into the autumn mindset so I decided to give it a whirl! When I was at Trader Joe’s, I spied a pumpkin spice bread/muffin mix and I immediately tossed it into my cart.

On Saturday morning, I assembled all the necessary ingredients for the muffins:

 I bought these cupcake liners when I was at the Container Store for $5, I used the gingham pattern ones! My roommate had purchased the pink silicone cupcake liners from World Market, they were great & super easy to clean (Bonus: they’re dishwasher safe).

 After mixing all the ingredients together, I added milk chocolate chips because I have an incurable sweet tooth. The muffins took 20 minutes to bake so this recipe took about 25 minutes total (5 minutes for preparation & mixing). Super easy and the muffins turned out really delicious!

I think I’m officially in autumn mode!
