{Easy Stir Fry}

You know those evenings when you come home from work and you really just want to flop onto the couch and watch TV? But you have to make dinner first! I love to cook and play around the kitchen but there are evenings when even I am not in the mood to prepare dinner. Well, this dinner takes about 10 minutes to make and gets you a serving of veggies and grains. Not too bad, right?

Ingredients

Trader Joe’s Asian Vegetable Stir Fry

Trader Joe’s Island Soyaki

Brown Rice

Directions 

Prepare brown rice as directed on the packaging (in my case, it was pre-cooked so I only had to heat it up in a skillet).

Lightly oil a skillet with Extra Virgin Olive Oil and put on medium heat.

After about 4 minutes on medium heat, add approximately 1/3 cup of Island Soyaki to the skillet. Turn the skillet on low heat.

Stir the vegetables to ensure even coating.

At this point, you could add white fish, chicken or even tofu if that floats your boat. For this meal, I opted for just the vegetables.

Stir Fry Complete

In a bowl, combine the brown rice and vegetables. For good measure, you could add a dash of sriracha!

I actually made 2 meals of this dinner, one bowl for dinner that night and the leftovers were the next day’s lunch. Not a bad deal for about 10 minutes in the kitchen.
