While everyone is wearing white jeans every day ’til Labor Day to celebrate the best fashion of summer, I’m honoring another summer best. I’m talking, of course, about the tomato sandwich.
To me, the tomato sandwich embodies summer. The crisp toast with a smear of smooth mayonnaise surrounding the sweet tomato is pure heaven. In the summer, no one wants to turn on the oven or miss a moment of the sunshine. The tomato sandwich requires only a toaster and is ready in minutes. You can bet I’ll be having as many as I can before tomato season comes to a close.
