Iced Cookie Butter Coffee

I have iced coffee envy.

I might sound like a broken record but while I love the smell of coffee, the taste just doesn’t do it for me. When I meet with friends for coffee, I get a chai and move on with my day. But when iced coffee season kicks in, so does my iced coffee envy.

Iced coffee just looks like so much fun!

I have iced coffee FOMO.

Yup, I said FOMO.

So I decided to discover an iced coffee to be my gateway drug. I decided to go big. What has a big enough flavor to ease the transition to coffee?

And like most of life’s answers, the answer was staring me right in the face.

COOKIE BUTTER!

Yup, the answer to my dilemma was on a spoon as I ate the cookie butter straight out of the jar. To paraphrase Ron Swanson, “Son, there’s no wrong way to consume cookie butter.”

I did a little experiment and it turns out: Vanilla Almond Milk + Cookie Butter + Ice Cube Tray = FLAVOR NIRVANA.

When Carly Simon sang abut the clouds in her coffee, I bet you anything they were cookie butter clouds.

I might have to invest in another ice cube tray purely for this magical nectar from the gods. It’s THAT good.

Simply plop spoonfuls of cookie butter (“One spoonful for the tray, one spoonful for me…”) into an empty ice cube tray. Top with vanilla almond milk, or regular milk if that’s more your speed, and let freeze overnight.

The discovery of iced cookie butter coffee might not only have solved my iced coffee FOMO but I might have just completely eradicated any case of the Mondays. You’re welcome, America.

    I love your strategy of feeding your ice tray one scoop and feeding yourself one scoop 🙂 I think these are pretty simple recipe steps I can follow! I wish I had one of these this morning.

      Yup! I used a medium roast that I made with a French press and I may or may not have made extra cookie butter cubes to eat just by themselves 🙂
