Mediterranean Quinoa Bowls with Beso Del Sol Sangria

Kinda just want to dive right in, don’t you?

It’s hard to believe it’s September 1st (Hogwarts Express, anyone?) and it’s the final countdown to the end of Summer 2015.

I’ve heard this winter is supposed to be a doozy (read: get some Bean boots while you can) so I’m trying to spend as much time outside as I can and soak up the summer sun. Lately, my favorite dinner companion is a book + a glass of sangria for a dinner al fresco.

Side note: Has anyone read (or currently reading) The Night Circus? I’m about 100 pages in + I can’t stop!

Quinoa has made a major comeback in my life + eating habits recently, thanks to a pantry inventory…I was becoming an at-risk quinoa hoarder.

Quinoa bowls are a wonderfully blank canvas to add market veggies, protein +fresh herbs to create a healthy, flavorful meal in minutes. Perfect for evenings when you just want to be outside with sangria + friends!

Mediterranean Quinoa Bowls + Beso Del Sol Sangria. YES!

Oh yeah, this isn’t your college boxed wine.

Beso Del Sol’s Red Sangria is delicious: it’s sweet, fruity + totally refreshing. I’m normally not a red wine girl but this sangria has me singing a different tune. And reaching for more reds!

Add some ice cubes to wine glasses + top off with red sangria + an orange slice. And you’re in business!

Just throwing it out there…Beso Del Sol Red Sangria Slushies. Sangria for thought ; )

There’s no exact recipe for a Mediterranean quinoa bowl, you build it to make you + your tastebuds happy. For me, personally, here’s my rhythm:

  • 1/4 cup, cooked quinoa
  • 1 tomato, chopped
  • 1/2 grilled chicken breast, chopped (To make it easier, I love Trader Joe’s Grilled Chicken Strips)
  • Depending on produce: 1 sautéed zucchini + chopped cucumbers
  • Spoonful of Trader Joe’s Spicy Hummus
  • Spoonful of Cava Foods Harissa
  • Spoonful of Tzatziki

With the sangria + Mediterranean quinoa bowl, the score is You: 2, End-of-Summer: 0.

Yum yum yum! I love everything about those post! I’ve never tried to make a quinoa bowl at home, but it reminds me of how I dress up my bowls at Cava Mezze. Gotta check out that sangria too!
