Popsicles = Summer.

Growing up, we always have a solid supply of popsicles in the freezer. Original, Tropical, Creamsicle, even some Fudgsicle to change things up. I probably had about 3 Popsicles a day in the summer to beat the heat. And then I moved to DC and discovered the true meaning of “humidity.” During my first summer in DC, I pretty much lived on iced chais, salads, quinoa and Popsicles. I’d come home from work, flop down on the couch in front of the glorious, glorious air conditioner and have a Popsicle for dinner. I swear, the humidity does weird things to your appetite. That summer, Whole Foods had a coupon for their store brand fresh fruit Popsicles and I think I’d go through 2 boxes each week. When it was THAT hot, the very last thing I wanted to do was go into the kitchen and turn on the stove. I was seriously worried I’d just automatically combust.

Besides, these Popsicles had fresh fruit in them so I was being healthy, right?

Last summer, I bought a Popsicle mold and guys, the only thing more fun than eating Popsicles is MAKING them. Like these mojito Popsicles. Do it. Do it now. The possibilities are endless! Fresh Fruit Greek Yogurt Popsicles

Ingredients
  • 1 cup blueberries
  • 1 cup strawberries, quartered
  • 3 tsp. agave nectar
  • 3 cups vanilla Greek yogurt
Instructions
  1. In a food processor, puree the blueberries until thoroughly blended. Scrape down the sides as necessary. Clean the food processor thoroughly and do repeat the process for the strawberries.
  2. In a small bowl, scoop about ½ cup of the vanilla yogurt and a teaspoon of agave nectar. Pour in the blueberry puree and stir to thoroughly combine. Repeat for strawberries in a separate bowl.
  3. Add a third bowl for the plain vanilla Greek yogurt and sweeten it with agave.
  4. In the popsicle mold, scoop about 2 tablespoons of each bowl (strawberry, plain and blueberry) until filled.
  5. Freeze overnight and let sit at room temperature for about 8-10 minutes before removing from mold.
