Whoever decided that swimsuit season and Girl Scout cookie season should be at the same time is evil. Cunning and evil. I have a voracious sweet tooth and absolutely zero will power so Girl Scout cookie season is one long test. I’ve been trying to shed a few pesky winter lbs. and I know the very last thing I need is an entire box of Thin Mints in my freezer. Or three boxes if we’re being honest.
But I had to get my Thin Mint fix somehow. Thankfully, the answer was staring me directly in the face.
I’m talking about my green smoothie breakfast. Lately, I’ve been switching between PB + J and tropical green smoothies but it was time to test out a Thin Mint inspired green smoothie. So I got to work!
I’ve been making an effort to “use what I have” when it comes to the recipes I share here so I turned to my cabinet and fridge to whip up this Thin Mint green smoothie. Poking around in the cabinet, I grabbed peppermint extract from my baking bin. With the extract, spinach, almond milk + agave, I was halfway there! I just needed that heavenly chocolatey flavor…
This is where I had to call in the big guns. I’m talking, of course, about Trader Joe’s. I picked up their cocoa powder in the baking section and voila! Time to get blending!
When making smoothies, always blend the greens + liquid first. You’ll get a smooth smoothie every time. I then added the rest of the ingredients and blended again. Consider my Thin Mint craving cured!
Okay maybe not 100% cured because let’s be honest, I’m going to have to pick up a box for those late-night sweet tooth cravings.
- 1 cup almond milk
- 1 cup spinach
- 2 tsp peppermint extract
- 2 tablespoons cocoa powder
- 1 tablespoon agave nectar
- Blend the almond milk and smoothie until thoroughly combined. Then add the remaining ingredients and blend until smooth.
