Happy Wednesday!! After discovering Trader Joe’s magical orange-flavored cranberries and putting them on candied walnut tartines, I just knew I had to find other ways to use them. I’m hooked, to put it mildly. I needed more cranberries in my life and in my holiday dishes!

Then it hit me: Brussels sprouts.

And keeping my promise to share easy holiday appetizers that quickly come together and don’t create a huge mess, here is my holiday Brussels sprouts dish!

Though truth be told I miiight be a little selfish with this dish since I’m the only one in my family who eats/loves brussels sprouts 😂

This holiday Brussels sprouts recipe makes a delicious side dish for your holiday meal, especially if you or a family member is vegetarian. You could also use the leftovers the next morning to create a filling omelette or egg scramble for brunch with your family. And did I mention you only use one skillet to make it?

Holiday Brussels Sprouts

Turn up your favorite Christmas song and let’s get cooking!

Ingredients You Need 

1 lb Brussels sprouts

1 tbsp extra virgin olive oil

Trader Joe’s Orange Flavored Cranberries (1/2 bag)

Salt + pepper

Juice of 1/2 lemon

Shaved Parmesan (to taste)

How To Make Holiday Brussels Sprouts

First up, you need to thinly slice the Brussels sprouts. I followed the instructions in this video to do it properly. If you’re short on time (who isn’t during the holiday?), Trader Joe’s has bagged shredded Brussels sprouts you can use.

In a large skillet, head 1 tbsp of olive oil over medium-low heat. Once the skillet is hot, add the shredded Brussels sprouts and mix to evenly coat with olive oil.

Sauté for about 4-5 minutes (I did it a little bit longer since I like my sprouts to be a bit on the darker side) and turn off the heat.

Season with salt, pepper, and lemon juice. Toss to combine.

Add the cranberries and shaved parmesan, toss again to combine.

Serve!
