Curry in a Hurry

Ingredients
  • 2 tbsp, coconut oil
  • 1 garlic clove
  • 1 cauliflower, chopped in bite size pieces
  • 2 cups, brussels sprouts (trimmed)
  • 1.5 tbsp, curry powder
  • 1.5 cans, light coconut milk
  • ½ cup, vegetable stock
  • Sprinkle of red pepper flakes (or cayenne) for heat, optional
Instructions
  1. In a deep skillet over medium heat, add the coconut oil and garlic clove. Once hot, toss in the cauliflower pieces and brussels sprouts.
  2. Sauté the vegetables for about 5 minutes or until browned. Add curry powder, salt and pepper, toss to coat.
  3. Pour in the light coconut milk and vegetable stock, stir to combine. Bring the heat to medium-low.
  4. Sprinkle in the red pepper flakes, if you'd like a little heat.
  5. Bring to a boil and then lower heat to simmer for about 15 minutes. Stir occasionally.
  6. Serve over quinoa or spiralized zucchini.
