Greek Marinated Zucchini Salad

Ingredients
  • Red wine vinaigrette
  • 1 medium zucchini, peeled into ribbons
  • 1 tomato, chopped
  • 1 cucumber, chopped
  • Kalamata olives
  • Feta
Instructions
  1. Prepare the vinaigrette.
  2. Peel the zucchini into ribbons using a vegetable peeler.
  3. Place the zucchini ribbons into a container and pour about 2 cups of the vinaigrette over the ribbons.
  4. Toss to evenly coat.
  5. Cover and store in the fridge about 1-2 hours.
  6. Place the zucchini in a bowl and top with tomato, cucumber, kalamata olives and feta.
