Happy Mardi Gras!! It’s the day to let loose and go crazy before the Lenten season kicks in. And by crazy, I mean have some wine and maybe eat cookie butter straight out of the jar with a spoon. Or you can whip up these incredibly easy beignets with Pillsbury biscuits! Seriously, give it a whirl – they’re life-changing. Fried dough plus confectioner’s sugar = YUM.
I’m thinking of asking these tacos to be my Valentine. Spicy yet sweet with a solid crunch AND totally guilt-free? Swoon. It’s true love, guys. My love affair with Trader Joe’s is very well-documented on this blog. Yet through the years, soy chorizo has remained firmly on my list of All-Time Favorite TJ’s Items. It’s vegan and gluten-free and even if you’re a dedicated omnivore or carnivore, this soy chorizo will knock your socks off. It tastes like authentic chorizo but with zero cholesterol and 100% versatility. I’ve sautéed it with riced cauliflower to create a breakfast burrito bowl and mixed it with a cheese sauce to go over nachos. Sky’s the limit!
Whew, I’m back and let me tell you, I don’t think I could eat another bite! After our family’s Christmas Eve dinner, Christmas Day Belgian waffle breakfast and Christmas Day leftovers feast, I am living in leggings and in need of a healthy detox reset. I did have a salad yesterday for lunch. Topped with chicken fingers.
